Dehydration uses low, steady heat and airflow to slowly remove moisture over many hours. It gently concentrates a single ingredient — say, sweet potato or chicken breast — into a chewy or crisp treat, without needing preservatives. The gentle part matters: low temperatures help preserve the character of the ingredient rather than blasting it.
Freeze-drying works differently: the food is frozen, then placed in a vacuum where the ice turns straight to vapor. It removes moisture at very low temperatures and tends to keep the original shape and a light, crunchy texture. It's effective — but the equipment is expensive and energy-intensive, which is part of why freeze-dried treats often cost more.
